Finding Food

Today is Family Game Day at my parents house! So exciting! The girls and I were rummaging through our recipes to hunt down South Beach-friendly foods to make and take to the festivities! DH has announced his way-of-life change in his diet and I am here to support him. So, out go the Pretzel Salad and Chocolate Delight ideas to take and we are replacing them with PROTEIN PACKED PROVISIONS. Um. Little Smokies. Is that enough? And there isn't even a recipe for that! lol

So, we failed miserably for Game Day BUT we did come up with yummies for Sunday dinner. Our church family is having a carry-in after the morning service Sunday so we ordered fried chicken to be picked up on our way to church, made layered lettuce salad and angeled eggs and put them in the garage frig. Yum!

Layered Lettuce
one head iceberg lettuce
medium red onion, chopped
1 bag frozen peas
4 hard boiled eggs, diced
2 cups cauliflower cut small
1 lb cooked and crumbled bacon
shredded cheese

Dressing:
2 cups real mayonnaise
2 tablespoons sugar
Mix well so that no crystals remain.

Chop lettuce and put half the head onto the bottom of dish. Layer half the chopped onion, half the bag of peas, 2 of the eggs, 1 cup of cauliflower and half of the dressing. Begin with lettuce and layer all ingredients and top with dressing. Add cheese and bacon on top. Cover and chill overnight.
